Mayonnaise
Ingredients:
- 2 egg yolks
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 3/4 rice bran oil
- Salt and white pepper
Method:
- Separate eggs
- In a medium bowl, whisk together 2 egg yolks, mustard and lemon juice, until light and creamy
- Very slowly add oil, about 1 teaspoon at a time, whisking continuously
- You can add the oil more quickly as the mayonnaise thickens. Season to taste with salt and white pepper.
- Pour into jar and refrigerate
